Pappy's on the right track
The main reason why there are a great deal of Buffalo nickels without dates are because the date itself is raised very high. which in turn as the coin wears by being circulated the date is the first to wear off. Another example of this is the Standing Liberty Quarters from 1917 to 1924. I have seen hundreds of them without a trace of a date. Starting in 1925 their dates were recessed which was good
